Can you believe we are in the final countdown to Christmas?! I only have a few more presents left to wrap & everything is almost done… with a little time to spare! Over the weekend Nick and I baked Christmas cookies and watched a holiday movie! Today I’m excited to team up with Laura & nine other bloggers to share our favorite Christmas cookie recipes with all of you as part of her 4th annual virtual cookie swap!
Baking cookies is something Nick and I look forward to every single year! It’s a fun winter activity that always puts us in the Christmas spirit. Last year we made sugar cookies that Nick grew up making and this year we decided to make Rudolph Peanut Butter cookies!
These Rudolph Peanut Butter cookies were so easy to make & would be the perfect activity to do with kids since you get to decorate them a bit! Read on for the recipe and to see photos of the finished cookies! It’s safe to say we will be making these on Christmas Eve to put out for Santa 😉
Rudolph Peanut Butter Cookie Recipe
You will need…
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 tsp vanilla
1 egg
1 1/3 cup flour
1 tsp baking soda
1/2 tsp salt
red m&ms
mini chocolate chips
mini twist pretzels
Directions
-Preheat oven to 350.
-Cream together peanut butter, butter, sugar and brown sugar until smooth.
-Add egg & vanilla and beat until smooth.
-In a separate bowl, whisk together flour, baking soda and salt.
-Slowly add dry ingredients into mixture. Beat until it’s all mixed together.
-Roll into 1/2″ balls and place on cookie sheet 2-3 inches apart.
-Sprinkle with sugar and make an indention slightly off center of each cookie. (tip: you can use a small spoon, your index finger or thumb to do this easily)
-While the cookies are baking break pretzels into pieces to use as antlers.
-Bake 12-14 minutes. If your cookies are on the smaller side, you may need less time.
-Once out of the oven place an M&M in the indention of each cookie.
-Insert two pretzel pieces at the top to be the antlers.
-Add two chocolate chips (pointy side down) above the M&Ms & you’re done!
